Korean beef  Hanwoo

The biggest difference between Hanwoo (Korean beef) and imported beef is the fat content. Hanwoo has evenly distributed marbling, which refers to the intramuscular fat within the meat. This marbling enhances the flavor and juiciness of the meat, giving it a tender and succulent texture. On the other hand, imported beef tends to have little to no intramuscular fat but instead has a thick layer of external fat surrounding the meat. This external fat can dilute or make the taste of the meat greasy.

Another difference between Hanwoo and imported beef is in their tendons or connective tissues. Tendons are tough, chewy parts found on the edges of meat. In Hanwoo, tendons are attached in the middle portion of the meat without much blood seepage, while in imported beef, tendons are attached at the upper part with blood seepage present. The tendons in Hanwoo are white in color and relatively less in quantity compared to imported beef where both fat and tendon colors appear duller with larger quantities.

Furthermore, there is a difference in quality between Hanwoo and imported beef. Hanwoo undergoes a grading system that evaluates its quality based on factors such as marbling level, muscle color, muscle texture, and muscle fiber thickness. The grades range from 1++ (highest) to 3 (lowest), with an additional grade called "out-of-grade." These grades are certified by nationwide inspections conducted by organizations like Korea Beef Council with a red mark indicating certification for quality assurance. In contrast, there may not be a standardized grading system for imported beef or it may differ from country to country; most often inspections are conducted by importers themselves with green marks indicating certification.
